My Super Salad


I thought that I would change things up a bit by posting a recipe for a really good salad. Salads can easily be a bit boring and if you want one to be a decent meal it needs some decent stuff in there.

Ingredients
2 big handfuls salad leaves
1 carrot, sliced thinly
1 tomato, diced
1/3 can baby beetroot, cut into chunks
1 soft boiled egg*
1 piece parmesan toast*
Chopped avocado and sunflower seeds to garnish
Your favourite salad dressing

* For a perfect soft boiled egg start with one egg at room temperature. Bring a pot of water to the boil and add the egg. Boil for 1 minute. Take the pot off the heat but keep the egg in the hot water for 8 more minutes.

* To make parmesan toast take a thick slice of bread and spray it with oil. Sprinkle the bread with some grated parmesan and place under the grill for 5 minutes or until the cheese is golden.

As with any salad it doesn't matter too much what you put in it but if you want it as a meal there are a few things to consider. I have used the egg as a source of protein but some cold meat or beans could be used instead. If you don't have any protein you'll get hungry soon after eating it. I also think its important to use lots of different things in salads to keep them interesting.
